Herb Crusted Chicken Breasts



This is such an easy meal to make. Perfect if you’re having the boss over or if you’re just in the mood for a great dish.So here’s how you make it:



Ingredients:
3- 4 chicken breasts (bone in)

6 garlic cloves

1 bunch Italian Flat-Leaf Parsley

½-cup bread crumbs

1/3 cup shredded Parmesan cheese

1 Tbsp lemon zest

2 Tbsp Olive oil

Kosher salt and pepper to taste


Take the chicken breasts, rinse them, and pat them dry. Next take the parsley leaves off the stem and add to the food processor. Peel the lemon zest with a vegetable peeler and thinly slice. Add the zest to the food processor. Take three large garlic cloves and run through a garlic press, and toss into the food processor. Add two tablespoons of olive oil into the food processor and turn on. Lift the skin off the chicken and cut slits into the meat. Slice a few garlic cloves and insert into the slits. Take one tablespoon of the parsley and garlic mixture from the food processor and spread over chicken. Next take the rest of the mixture and in a small mixing bowl combine it with the bread crumbs, lemon juice, and Parmesan cheese.  Spoon the stuffing underneath the skin of the chicken breasts and then place them in a baking pan. Take the rest of the mixture and top the chicken breasts. Cover with foil and bake in a 400-degree oven for one hour. Remove the foil about 10 minutes before the chicken is done to allow the crust to brown. Lick your fingers and smile with satisfaction!
