Giada's Chicken Burger and My Apple and Cabbage Slaw


I've had a bunch of cooking shows on my DVR queue that I've been meaning to watch.  Yesterday was a perfect rainy Sunday to watch them.   One of the episodes of Giada at Home I saw sounded really good to me. She made these chicken burgers that were probably the best I've ever had.  Let me just say that this was by far the hardest dish I've ever had to photograph.  The pictures really don't do this burger justice.  It had a ton of flavor that pictures just can't convey.  You'll just have to trust me on this one.

P.S.  I didn't have ground chicken so I put four chicken breasts in the food processor and ground them that way.  The consistency was perfect.  I will not buy ground chicken anymore, now that I know how easy it is to do it yourself- plus you know exactly was is going into them.



For the Mayonnaise:
1 cup mayo
2 tbsp. fresh chopped rosemary
1 garlic clove, grated

Combine all of the ingredients in a small bowl. Reserve half of the mayo to mix into the burger mixture.


For the Burgers:
4 boneless skinless chicken breasts or 1 lb. ground chicken (Grind the chicken breasts in the food processor)
1 garlic clove grated
1/2 cup garlic-rosemary mayo (from above recipe)
1 tsp. salt
1 tsp. olive oil (for grilling)
4 kaiser rolls
1 cup baby spinach leaves, divided

Preheat the oven to 350 degrees. Combine the chicken, mayo, salt and garlic clove, making sure to incorporate the mayo evenly throughout the mixture. Add olive oil to a grill pan or skillet. Turn the heat to medium high and allow the pan to get hot. Wet your hands before forming the patties because the meat will be really really sticky. You might think it's too wet, but it will yield a perfectly moist patty once cooked through. Cook for about 4 minutes on each side or until the patty is cooked through. Next slice the kaiser rolls in half and drizzle a little olive oil on each side to toast. Begin assembling the burgers by adding a little mayo to the bread, followed by the spinach, then the chicken and lastly the other piece of bread. Press down gently with your hand and cut in half.


I came up with this slaw and think it's the perfect accompaniment to the burgers.

For the Cabbage-Apple Slaw:
1 cup shredded red cabbage
1 cup shredded green cabbage
1/2 cup shredded carrots
2 gala apples
3 tbsp. golden raisins
1 bunch chives
1/2 cup slivered almonds
1 cup plain yogurt
1/3 cup sour cream
1/3 cup mayo
1 lemon (juice and zest)
1/3 cup Z Sweet (or sugar)
salt and pepper to taste

Begin by toasting the almonds slightly. I just put them in a pan and roasted them for about 3 or 4 minutes in the oven. You could also do it over the stove in a pan. Set aside. I sliced the cabbage and carrots in the food processor which took like 2.2 seconds. If you don't have a food processor you could chop the cabbage and carrots by hand. Next slice the apples into thin wedges. Add the cabbage, carrots, apples, raisins and almonds to a large bowl. Add in the Z-sweet or sugar. In a separate bowl, combine the yogurt, sour cream and mayo and whisk. Add this mixture to the bowl with the other ingredients and combine well. Next zest the lemon and add the juice to the slaw. Lastly finely chop the chives, season with salt and pepper and mix well one last time.

Migui me alegro que te gusto la ensalada de col. Creo que la manzana le da un toquesito dulce sabroso.
