Mahi with Savory Onion Confit



Some recipes are proof that simple ingredients can create something truly special. This dish pairs tender mahi with a rich savory onion confit made with caramelized onions, mushrooms, sun-dried tomatoes, and beef bacon. The flavors are deep and savory, with just enough balsamic to bring everything together.

Serve it over roasted spaghetti squash or zucchini noodles for a lighter meal, or alongside rice, orzo, or angel hair pasta if you prefer. However you serve it, this is one of those recipes that’s elegant enough for guests but simple enough for a weeknight dinner.


Savory Onion Confit

Ingredients

1 large onion, finely diced
4 garlic cloves, chopped
8 slices beef bacon, diced
1 pint baby bella mushrooms, sliced
⅓ cup sun-dried tomatoes, diced
1 tablespoon balsamic vinegar
¼ cup chicken stock
Salt and freshly cracked black pepper, to taste

Directions

Cook the beef bacon in a large skillet over medium heat until crisp. Transfer it to a paper towel-lined plate, reserving about 1 tablespoon of the rendered fat in the skillet.

Add the onion to the skillet and cook until softened and beginning to caramelize, about 10 minutes. Stir in the garlic and cook for another minute, just until fragrant.

Add the mushrooms and sun-dried tomatoes, cooking until the mushrooms are tender and most of their moisture has evaporated.

Pour in the chicken stock and balsamic vinegar, then return the cooked bacon to the skillet. Simmer until the liquid has mostly reduced and the mixture becomes thick and spoonable. Season with salt and freshly cracked black pepper to taste.


Mahi

Ingredients

2 mahi-mahi fillets
1 tablespoon olive oil
Salt and freshly cracked black pepper, to taste

Directions

Pat the mahi dry with paper towels and season both sides with salt and pepper.

Heat the olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the fish and cook undisturbed for 2 to 3 minutes, allowing a golden crust to develop.

Carefully flip the fillets and continue cooking until the fish is opaque and flakes easily with a fork.

To serve, spoon a generous layer of the savory onion confit onto each plate. Top with a mahi fillet and finish with another spoonful of the confit.

Serve immediately with roasted spaghetti squash, zucchini noodles, or your favorite side.

This looks fantastic. I've been on Paleo now (from our discussions in KY) and I'm a fan. 3 pounds in the first week....probably all water. Loving it though. Last night I made butternut squash puree with garlic.....it was the BOMB! Service it with grilled asparagus and grilled sirloin. I eat blueberries for dessert...they are so yummy, and you just pop them like candy. Very satisfying. Another snack I like is raw sweet potatoes. Just cut them up like carrot sticks...they are quite good!
