South Beach Diet Friendly Pizza
Pizza had been on my mind this week. One of my co-workers, started the South Beach Diet and was craving pizza. We talked about tweaking this classic so that it would be "south beach appropriate" and this is what I came up with- make a whole wheat crust, and 2% cheese. This made me start craving pizza too. It looked prettier before it was baked, but who eats raw pizza anyway? So here's how you make it.
2 cups whole wheat flour
1 tsp salt
1 package active dry yeast
3 Tbsp olive oil
3/4 c warm water
1/2 tsp sugar
1/3 cup Emeril's Roasted Gaaahlic spaghetti sauce
1 tsp tomato paste
8 slices of provolone cheese
1/2 cup shredded mozzarella cheese
1/4 cup sun-dried tomatoes packed in oil
3 garlic cloves
1 Tbsp olive oil
Mix the flour, salt, sugar and yeast in a bowl. Make a groove or well in the center. Add the oil and water then mix into a soft and workable dough, adding more water if needed. Work dough into a ball and place in a covered bowl. This will allow the dough to rise. After 20 minutes, knead well until smooth and elastic.
Pre-heat the oven to 400 degrees. Dust your surface with white flour and begin to roll out your dough using a rolling pin. Since this dough is made with whole wheat flour, you should roll out the dough pretty thin to prevent toughness. In a small saucepan mix the tomato paste and the spaghetti sauce. Combine well and spread over the pizza dough. Take your provolone cheese and scallop around the pizza, since provolone cheese is round it will leave an open area in the middle which you will top with your shredded mozzarella. Next slice your sun-dried tomatoes and add to the pizza. Then slice the garlic and add to the pizza too. Put on a baking sheet and bake in the oven for 15 minutes until the dough is crisp and the cheese is bubbly. Slice and serve.
